Peanut Butter and Banana Breakfast Bars: Ingredients

You’ll need just seven ingredients to make these delicious breakfast bars. From the velvety sweetness of the bananas to the nutty crunch of mixed nuts, each element plays its part to craft a delightful adventure in every bite.

  • Bananas -this humble fruit brings a natural sweetness and creaminess to our breakfast bars. Ripe and golden, bananas add a burst of flavour and a wealth of nutrients, including potassium, vitamin C, and dietary fibre.
  • Nuts mix (I used almonds, hazelnuts, cashews) – almonds offer a subtle sweetness, hazelnuts add a nutty richness, and cashews contribute a buttery background flavour. Together, they create a harmonious blend that complements each other perfectly.
  • Oats – a great source of complex carbohydrates, fiber, and various vitamins and minerals. They add a hearty and nutty flavour that pairs perfectly with the other ingredients.
  • Crunchy peanut butter – it’s rich in healthy fats, protein, and essential vitamins and minerals. Peanut butter brings a luscious creaminess and a satisfying depth of flavour.
  • Yuzu juice – time to add a zesty twist! Yuzu juice, with its tangy and citrusy goodness, lends a refreshing brightness to these bars.
  • Honey – a drizzle of honey adds a touch of sweetness.
  • Vanilla sugar – a sweet-scented ingredient that adds a subtle aromatic essence to these energy-packed breakfast bars.

Peanut Butter and Banana Breakfast Bars: Variations

One of the best things about cooking is the freedom to experiment and personalise recipes to suit your taste and preferences. So, here are some flavour variations for peanut butter and banana breakfast bars. Go on, have some fun!

  • Nutty mix – instead of using almonds, hazelnuts, and cashews, you could swap them for walnuts, pecans, or pistachios. Each nut brings its unique flavour and texture, giving your bars a new twist.
  • Nut butter swap – you can substitute crunchy peanut butter with almond or cashew butter.
  • Citrus – instead of yuzu juice, you can add lemon or lime zest and juice to the mix. It’ll bring a beautiful citrusy aroma without the tangy juice.
  • Sweeteners – honey is wonderful, but if you prefer other sweeteners, feel free to add maple syrup, agave nectar, or date syrup for a unique twist on sweetness.
  • A touch of spice – elevate your bars with a sprinkle of cinnamon or nutmeg, adding warmth and depth to the flavour profile.
  • Dry fruits – enhance your bars with the addition of dried fruits such as cranberries, raisins, or chopped apricots for bursts of natural sweetness.
  • Chocolate indulgence – drizzle melted chocolate over the bars or mix in some chocolate chips.

Prepare the bars:

  1. Preheat the oven to 180 degrees. Line a baking pan with baking paper.

  3. Add the chopped nuts and oats to the mashed banana. Mix well until all the ingredients are evenly combined.

  6. Bake in a preheated oven for 20-25 minutes or until the bars turn golden brown around the edges.
