Mornings can be so stressful. Especially if you are not a morning person. Getting up early and making yourself a delicious breakfast is sometimes a difficult task. This is one of the reasons why most of us end up with a cup of coffee and a croissant.
To be honest, that’s definitely me. I am not a morning person and if I need to choose between 20 minutes of sleep or make myself a healthy breakfast, I’ll usually choose sleep!
This is why I started searching for solutions and tips on how to make a healthy breakfast in the shortest amount of time. This particular dish was inspired by my childhood when my Mum used to bake something similar on Sunday mornings. She would bake it for almost an hour, but the finished result was a fluffy, soft, in some kind of way cloudy dish. It was absolutely delicious and made the weekends so much better.
Well, I am not saying there is a magic way to get a delicious breakfast within minutes, but at least you can use the oven to do the main job. You can stick the products into it, set the timer, forget about it, do your make up, get dressed and when the timer goes off – hey presto! You have an amazing brekkie which can be packed for your work/school or just be eaten in between zoom calls.
You can use different ingredients – broccoli, cauliflower, spinach – whatever you have in your fridge. You can also add meaty ingredients like roasted chicken pieces, fried sausages or turkey. Everything works. Take this as inspiration and create your own flavour combo.
Ingredients:
4 eggs
50ml milk
2 tomatoes
50g peas
50g grated cheese
Dill
Salt and Pepper
Sides:
Chorizo slices
Buns
- Preheat the oven to 180 degrees.
- Whisk the eggs and milk, salt and pepper.
- Chop the tomatoes and add them into the egg mixture together with the peas, grated cheese and dill. Mix everything together.
- Bake everything together for 40 minutes.
- Serve with the warm bun, fried chorizo and the omelette.
