Baked feta cheese with roasted tomatoes is the perfect and easy lunch recipe. In less than 30 minutes you’ll be able to create a Mediterranean masterpiece that’s both easy to make and incredibly flavourful. Let’s get cooking!
There’s something magical about the fusion of rich, creamy feta cheese and the vibrant flavours of roasted tomatoes and peppers. This baked feta cheese with roasted tomatoes recipe was born back in Corfu where together with My Fussy Eater celebrated our first wedding anniversary.
In every single Taverna, we’re able to find at least one recipe with feta cheese. You can just imagine how many fetas we ate during our 5-day stay. After we came back to London the only thing was left to do was to keep eating this cheese repeatedly. Basically, we became obsessed with its richness, creaminess, and saltiness.
This recipe is a shining example of how a few quality ingredients can come together to create something extraordinary. With just a block of feta, some cherry tomatoes, red pepper, lemon zest, and olive oil, you’ll be amazed at the incredible flavours that develop.
Tips for the Most Delicious Baked Feta Cheese
To make this recipe you don’t need any culinary skills and even a completely newbie will be able to create an extraordinary dish. But to help you, here are a couple of tips:
- Choose quality ingredients. No surprise, that the heart of this dish is the feta cheese, so opt for a high-quality block. Look for feta made from sheep’s milk or a blend of sheep’s and goat’s milk for an authentic Mediterranean flavour.
- Don’t sink the cheese with olive oil. While olive oil is a key player in this recipe, remember that a little goes a long way. Drizzle it over the feta and tomatoes, but don’t drench them. The oil will intensify the flavours without overwhelming the dish.
- Add a touch of lemon zest. The lemon zest adds a zingy, citrusy note that balances the richness of the cheese and tomatoes.
- Serve feta cheese with pita bread. Baked Feta Cheese is incredible on its own, but you can enhance the experience with some fresh, crusty bread or pita for scooping and dipping.
Baked Feta Cheese: Substitutions and Variations
Unfortunately, this is not the recipe with a lot of room for improvisation. It has 5 main ingredients that are hard to change, however, you can still make your spin:
- Make the recipe more colourful by adding herbs. Sprinkle fresh basil, oregano, or thyme over the top.
- Give your dish a kick with a pinch of red pepper flakes for some heat.
- Feel free to add more roasted vegetables like zucchini, eggplant, or red onion for a colourful, flavourful medley.
- Top your baked feta with chopped nuts, such as walnuts or pine nuts, for some delightful crunch.
- Serve the baked feta on a bed of creamy hummus for a luxurious Mediterranean dip.
