Ingredients

Cake:
100g plain flour
50g ground almond
1 teaspoon baking powder
Pinch of salt
150g Greek yoghurt (used this one)
100g caster sugar
1 blood orange (zest and juice)
100ml vegetable oil
2 eggs

Glaze:
1 blood orange (juice and zest)
150g icing sugar

Method

Make the cake:

  1. Preheat the oven to 1800 degrees. Grease a loaf pan with baking spray and line it with baking paper.
  2. Mix together the flour, ground almonds, baking powder and salt.
  3. In a different bowl, whisk together the Greek yoghurt, sugar, blood orange juice and zest, eggs, vegetable oil and eggs.
  4. Add the flour mixture to the yoghurt mixture and mix until combined.
  5. Pour the batter into the prepared pan. Bake for 50 minutes.

Make the glaze:

  1. Whisk the blood orange zest and juice together with powdered sugar.

Arrange the cake:

  1. After the cake is completely cool down drizzle the glaze on top.
