As a child, I was always in love with some type of egg salad or sandwich. My ultimate favourite combination was eggs, hard cheese, mayonnaise and a lot of garlic. Not the best fragrant selection, but damn it was good. I would make it after school and eat everything in one go.

This time, I tried to a little bit elevate this simple recipe and add some dimensions and new spins. I’m still using the simplest ingredients ever, but everything works so well together. Plus, this recipe is so easy to customise. Add some crispy bacon for extra flavour or throw in some crunchy veggies for added texture. The possibilities are endless.

Egg Salad Sandwich

Recipe

Ingredients

Homemade Mayo:
1 egg yolk
1 teaspoon wholegrain mustard
1 garlic clove
150ml oil (sunflower – I used this one)
Salt and pepper

Sandwich:
2 sourdough bread slices
2 hard boiled eggs
Fresh chives
1 teaspoon Dijon mustard
½ teaspoon curry powder
1 tablespoon homemade mayo
1 teaspoon Greek Yogurt
Salt and pepper

Method

Make homemade mayo:

  1. Add the egg yolk, mustard and garlic into a food processor. Season with salt and pepper and whisk together until completely combined.
  2. Whisking constantly, add a small drop of oil and whisk until completely combined, then add another drop and continue a drop at a time until the yolks and oil combine and start to thicken.
  3. Keep adding oil until you reach the desired consistency.

Prepare the sandwich:

  1. Chop your hard-boiled eggs and mix them with chives, mustard, curry powder, homemade mayo, Greek yogurt, salt and pepper.
  2. Toast your bread slices.
  3. Spread the egg mixture on top of the bread slice.
  4. Finish the sandwich with herbs (like fresh parsley).
