Easter without eggs is not Easter. Now it’s time to make a delicious easy recipe with those hard-boiled egg leftovers. And what can be better than a creamy, delicious and fragrant egg salad sandwich?!

As a child, I was always in love with some type of egg salad or sandwich. My ultimate favourite combination was eggs, hard cheese, mayonnaise and a lot of garlic. Not the best fragrant selection, but damn it was good. I would make it after school and eat everything in one go.

This time, I tried to a little bit elevate this simple recipe and add some dimensions and new spins. I’m still using the simplest ingredients ever, but everything works so well together. Plus, this recipe is so easy to customise. Add some crispy bacon for extra flavour or throw in some crunchy veggies for added texture. The possibilities are endless.

Egg Salad Sandwich: Tips for the Best Recipe

By following the following tips, you’ll be well on your way to creating the best egg salad you’ve ever tasted. Whether you’re enjoying it between two slices of bread, atop a bed of greens, or simply scoop it up with crackers, your homemade egg salad is sure to be a hit!

  • Homemade Mayo for Extra Creaminess: Skip the store-bought stuff and make your own mayo for the creamiest egg salad ever. Simply whisk together an egg yolk, wholegrain mustard, garlic, and oil until thick and creamy. Season with salt, and you’ve got yourself a delicious homemade mayo that takes this egg salad to the next level.
  • Make Ahead: if you can, make the salad at least a day ahead. This way all the flavours will melt and blend in together.
  • Chop, Don’t Mash: When it comes to mixing your egg salad, opt for chopping rather than mashing. This helps maintain a satisfying texture with small, uniform pieces of egg throughout.
  • Balance Your Flavours: Egg salad is all about balance. Achieve the perfect flavour profile by balancing creamy richness with tangy acidity and subtle spice. Incorporate ingredients like Dijon mustard, Greek yogurt, and a hint of curry powder for depth of flavour. Taste as you go and adjust the seasoning accordingly to achieve the perfect balance of flavours.
  • Fresh Herbs for Brightness: Add a pop of freshness and colour to your egg salad with the addition of fresh herbs. Chopped chives, parsley, or dill not only enhance the flavour but also add visual appeal. Sprinkle them generously over the finished egg salad for a burst of brightness and freshness in every bite.

Egg Salad Sandwich

Homemade Mayo:
1 egg yolk
1 teaspoon wholegrain mustard
1 garlic clove
150ml oil (sunflower – I used this one)
Salt and pepper

2 sourdough bread slices
2 hard boiled eggs
Fresh chives
1 teaspoon Dijon mustard
½ teaspoon curry powder
1 tablespoon homemade mayo
1 teaspoon Greek Yogurt
Salt and pepper

Make homemade mayo:

  1. Add the egg yolk, mustard and garlic into a food processor. Season with salt and pepper and whisk together until completely combined.
  2. Whisking constantly, add a small drop of oil and whisk until completely combined, then add another drop and continue a drop at a time until the yolks and oil combine and start to thicken.
  3. Keep adding oil until you reach the desired consistency.

Prepare the sandwich:

  1. Chop your hard-boiled eggs and mix them with chives, mustard, curry powder, homemade mayo, Greek yogurt, salt and pepper.
  2. Toast your bread slices.
  3. Spread the egg mixture on top of the bread slice.
  4. Finish the sandwich with herbs (like fresh parsley).
