Delicious and chewy oat cookies with cranberries and pecans are the perfect recipe when you need a hit of sugar in your life. It’s very easy to make these biscuits and will take you less than half an hour. You can also swap dried berries and nuts according to your taste.

You know what, I’m starting to understand why people like cookies. For a long time, they really weren’t my cup of tea. I always thought of biscuits as crunchy, hard ‘teeth breakers’. However, the moment I started playing with ingredients and discovered the perfect baking time, everything changed.

How to Make the Best Oat Cookies

I love this recipe because it’s easy, takes less than 30 minutes, and can be done on a busy weekday evening when you need a moment to relax and escape from your hectic workload.

All you need to do is…

  1. Whisk the butter with the sugar.
  2. Add the egg
  3. Mix the dry ingredients together.
  4. Combine the wet and dry ingredients.
  5. Add the dried fruits and nuts. The dough should be sticky.
  6. Form the same size cookie balls.
  7. Chill the cookie dough. If you have time, I recommend leaving the dough in the freezer overnight, however if you’re short on time, you can skip this step.
  8. Bake. It will take you up to 20 minutes depending on the size.

Recipe

Ingredients

Cookies:
110g unsalted room temperature butter
50g caster sugar
50g brown sugar
1 teaspoon vanilla extract
1 teaspoon vanilla sugar
1 large egg
100g rolled oats
125g plain flour
½ teaspoon baking powder
½ teaspoon salt
50g dry cranberries
50g raisins
50g chopped pecans

Chocolate ganache:
50g milk chocolate
50ml double cream

Method

Prepare the cookies:

  1. Preheat the oven to 180 degrees and line a baking tray with a baking sheet.
  2. Add the butter with both sugars together in a bowl. Mix with an electric mixer for a couple of minutes until everything is combined and you get a smooth paste.
  3. Add the vanilla extract, vanilla sugar and egg. Whisk everything together.
  4. Add the remaining ingredients (oats, flour, baking powder, cranberries, raisins and pecans). Mix everything together until fully combined.
  5. Form round disks (or balls if you want, just make sure they’re the same size) and place them on a prepared tray.
  6. Bake in the oven for 18 minutes or until they are golden.

Prepare the chocolate ganache:

  1. Heat the double cream and add the chocolate.
  2. Let the chocolate melt, then mix everything together.
  3. Set aside to cool.

Finish the cookies:

  1. Take the cookies out of the oven.
  2. Drizzle some chocolate ganache on top of the baked cookies.
