Recipe

Ingredients

Strawberries:
250g fresh strawberries
1 tablespoon icing sugar
1 lime

Tiramisu:
250g mascarpone cheese
2 tablespoons icing sugar
1 teaspoon vanilla extract
500ml double cream
1 pack of ladyfingers (used these ones)

Syrup:
50ml yuzu juice
50ml strong mint tea

Method

Make the strawberries:

  1. Slice your strawberries into same-size circles.
  2. Add icing sugar, lime juice and the zest. Mix everything.
  3. Let it sit for about 30 minutes until the strawberries release the juice.

Make the cream:

  1. Beat the mascarpone cheese with powdered sugar and vanilla extract until smooth. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined.Add the juice from the strawberries and mix everything.

Make the syrup:

  1. Combine both ingredients.

Assemble tiramisu:

  1. Add 1/3 of the mascarpone cream to the bottom of your serving bowl.
  2. Add a layer of the sliced strawberries (half of them).
  3. Dip each ladyfinger into the syrup. Arrange a layer of soaked ladyfingers on top of the strawberries.
