Crispy Roasted Potatoes: Ingredients

To make this delicious recipe you will need just a handful of simple ingredients and each of them plays a massive part in this dish.

To make crispy roasted potatoes:

  • Salad potatoes are small, waxy potatoes are perfect for roasting due to their creamy texture and thin skins, which crisp up beautifully in the oven.
  • Smoked paprika adds a deep, smoky flavour to the potatoes, enhancing their overall taste and aroma with a hint of warmth and richness.
  • Sweet paprika provides a mild, sweet flavour and vibrant red colour to the potatoes, balancing out the smokiness of the smoked paprika for a harmonious blend of flavours.
  • Mixed herbs – a combination of dried herbs such as oregano, thyme, rosemary, and basil adds earthy and aromatic notes to the potatoes, elevating their taste profile with layers of savoury goodness.
  • Olive oil coats the potatoes, helping to crisp them up in the oven while infusing them with its fruity flavour. It also acts as a carrier for the spices, ensuring they are evenly distributed and adhere to the potatoes.
  • Parmesan cheese is sprinkled over the hot roasted potatoes, adding a nutty and savoury flavour that complements the spices and enhances the overall richness of the dish.

For the Homemade Aioli:

  • Egg serves as the base of the aioli, providing creaminess and helping to emulsify the other ingredients into a smooth and velvety sauce.
  • Wholegrain mustard adds a tangy and slightly spicy flavour to the aioli, complementing the richness of the egg and enhancing the overall taste profile of the sauce.
  • Vegetable oil is slowly drizzled into the aioli mixture while blending, helping to thicken and emulsify the sauce into a creamy consistency.
  • Freshly squeezed lemon juice adds a bright and zesty flavour to the aioli, cutting through the richness of the egg and oil and providing a refreshing contrast to the dish.

Recipe

Ingredients

Potatoes:
1kg salad potatoes (I used these)
1 teaspoon smoked paprika
1 teaspoon sweet paprika
1 teaspoon mixed herbs
Olive oil
Salt and pepper
50g parmesan cheese

Homemade Aioli:
1 egg
1 teaspoon wholegrain mustard
Vegetable oil
½ lemon juice
Salt and pepper

Method

Make the aioli:

  1. In a blender or food processor, combine the egg, wholegrain mustard, and a pinch of salt and pepper.
  2. With the blender running, slowly drizzle in the vegetable oil in a steady stream until the mixture emulsifies and thickens (might need around 200ml).
  3. Add lemon juice to taste and blend until well combined. Adjust the seasoning if necessary.

Prepare the potatoes:

  1. Preheat the oven to 200 degrees and line a baking sheet with parchment paper.
  2. Boil the potatoes (skin on) for 5-8 minutes and let them dry.
  3. Mix all the spices together (smoked paprika, sweet paprika, herbs, salt and pepper).
  4. Arrange the potatoes on a tray and press them with the spatula to make them squashed (if you keep them thin, they’ll be crispy, keep them thicker and they’ll be fluffy).
  5. Drizzle some olive oil and sprinkle the spice mix.
  6. Bake the potatoes for 30 minutes, take them out of oven, sprinkle grated parmesan and bake for 10-15 minutes.
  7. Serve crispy roasted potatoes with homemade aioli.
