Ingredients
Beans:
4 beef tomatoes
1 tin butter beans
2 garlic cloves
1 teaspoon mixed hers
Salt and pepper
Eggs:
4 eggs
Parsley
Lemon zest
Olive oil
Method
Make the dish:
- Preheat your oven to 200 degrees.
- Add the chopped tomatoes, butter beans, and minced garlic in a saucepan and cook on medium heat for 10 minutes. Season it with herb mix, salt and pepper.
- Transfer the beans to the baking dish. Make 4 wells and crack the eggs into them.
- Cook in the oven for 10-15 minutes or until you are happy with the eggs.
- Finely chop the fresh parsley. Add lemon zest, generous glogg of olive oil, salt and pepper. Mix everything.
- After your eggs are poached drizzle with parsley oil.
