Ingredients
Potatoes:
1kg salad potatoes (I used these)
1 teaspoon smoked paprika
1 teaspoon sweet paprika
1 teaspoon mixed herbs
Olive oil
Salt and pepper
50g parmesan cheese
Homemade Aioli:
1 egg
1 teaspoon wholegrain mustard
Vegetable oil
½ lemon juice
Salt and pepper
Method
Make the aioli:
- In a blender or food processor, combine the egg, wholegrain mustard, and a pinch of salt and pepper.
- With the blender running, slowly drizzle in the vegetable oil in a steady stream until the mixture emulsifies and thickens (might need around 200ml).
- Add lemon juice to taste and blend until well combined. Adjust the seasoning if necessary.
Prepare the potatoes:
- Preheat the oven to 200 degrees and line a baking sheet with parchment paper.
- Boil the potatoes (skin on) for 5-8 minutes and let them dry.
- Mix all the spices together (smoked paprika, sweet paprika, herbs, salt and pepper).
- Arrange the potatoes on a tray and press them with the spatula to make them squashed (if you keep them thin, they’ll be crispy, keep them thicker and they’ll be fluffy).
- Drizzle some olive oil and sprinkle the spice mix.
- Bake the potatoes for 30 minutes, take them out of oven, sprinkle grated parmesan and bake for 10-15 minutes.
- Serve crispy roasted potatoes with homemade aioli.
