You don’t need any experience to make this dish, however, to make your cooking time less stressful, here are a couple of tips that will help you to achieve perfection.

  • In my recipe I boiled eggs however, if you desire to poach them the key is to keep the water at a gentle simmer, not a rolling boil. This helps the eggs cook evenly and prevents them from falling apart. If you’re new to poaching eggs, try using the swirling water technique – create a gentle whirlpool in the water before adding the eggs to help them hold their shape.
  • Nduja can be quite spicy. If you’re sensitive to heat, you can reduce the amount of nduja or change this ingredient to simple pork or even chicken sausage. Also, you can keep it traditionally and use just brown butter.
  • You can prepare the yogurt base and the crispy nduja ahead of time. Store them separately in the fridge and reheat the nduja before assembling the dish.

Recipe

Ingredients

Turkish Eggs:
2 eggs
200g Greek yogurt
1 garlic clove
50g butter
50g Nduja sausage
Fresh dill
Salt and pepper

Method

Make the dish:

  1. In a bowl, mix Greek yogurt with minced garlic, salt, and pepper. Set aside.
  2. Fill a saucepan with water and bring it to a gentle simmer.
  3. Boil the eggs for about 6 minutes to achieve the perfect runny texture.
  4. In a small pan, heat the butter over medium heat. Add the nduja and cook, stirring frequently, until it’s crispy and fragrant (around 5 minutes).
  5. Spread the yogurt mixture onto a serving plate. Place the boiled eggs on top of the yogurt. Drizzle the melted butter and crispy nduja over the eggs.
  6. Garnish with fresh dill.
